Mom's Thanksgiving Stuffing

Hi everyone, Snowflake here. I'm not sure if you all know this but I'm Canadian. So this weekend being Canadian Thanksgiving and all I thought I'd share with you a special family recipe for the most delicious stuffing you'll ever had.
Mom's Potato & Bread Stuffing
6 potatoes {you can also substitute one sweet potato)
1tbsp olive oil
2 garlic cloves, minced
1/4 cup of chopped onions
1/4 cup celery, chopped
1/4 cup red peppers, chopped
1/4 cup carrots
1 cup stale bread
1/3 cup vegetable broth
salt & peper to taste
1. Cut potatoes and boil until soft. Mash them up and put aside
2. In a medium flat bottom saucepan, heat olive oil. Add garlic, onions, celery, peppers, carrots and sautee until tender. Add mixture to potatoes.
3. Cut the stale bread into cubes and fry in olive oil. You can use the same saucepan that you were just using for the veggies. Add salt & pepper to taste.
4. Add both the potato mixture and the bread in a greased pan and bake for approx. 30-45 minutes.
I also recommend topping this with delicious mushroom gravy for the absolute best Thanskgiving stuffing ever! Enjoy with family, or if you're like us dolls and are away from family members, have all of your friends together for an orphan Thanksgiving.
